Marstal No. 31 is made with respect and love for the spirits. The adventure started in a small apartment in Copenhagen on Marstal Street No. 31. After months of experimenting with various delicious botanicals a combination of sweetness and bitterness formed a classic gin recipe and the base of Marstal No. 31.
After finishing the recipe on Marstal Street No. 31 we needed to find a distillery that could produce the gin in larger quantities. We choose Nordisk Brænderi because of their love of spirits and their way of handling the botanicals. The distillery is placed by the ocean in beautiful nature. Marstal No. 31 is produced on a copper boiler from Müller Brennereianlagen in Germany. Marstal No. 31 is a batch-produced London Dry Gin, and each batch is distilled in small quantities of only 50 bottles per. distillation. The gin is made as a genuine craft production with water from its own well, which gives the gin its own personality. The production method is an expression of good craftsmanship and has nothing to do with major industrial productions. The copper boiler at the distillery passes the alcoholic fumes through an aRoMat, which is a purifier that enhances both the taste and alcohol strength.
